I am busy, busy, busy these last few days preparing for the Workshop that I am doing on Friday morning... Things are really starting to come together. I look forward to meeting and brain storming with the other cooks in the county. It will be a day filled with yummy food, great ideas and new friends.

This morning I made a beet hummus, the colour was fabulous and so was the taste ;)
1 can chickpeas rinsed 2 cooked beets with 1/4 of liquid they were cooked in and cooled 1/2 cup sour cream (I used 5%) 3 tablespoons of roasted garlic * add it all to food processor and blend until smooth serve with warm pita, cucumbers or your favorite crackers :) Oh my gosh! I knew I was making watermelon cake today but I never thought it would have tasted like this :) I was in bed last night trying to figure out how I could thicken the whipping cream without using sugar, and then it came to me...What if I use a sugar free pudding mix? It never hurts to try! So I did and it is amazing and there is no added sugar
2 cups of whipping cream partially whipped and a box of White Chocolate pudding mix (fat free/sugar free) once the pudding mix is added it gets very thick so I added more whipping cream and continued to blend with hand mixer until the "frosting" was the consistency that I was after. SO YuMMy!!! I hope you enjoy it as much as we all do. I can't wait to make a sweet potato cake and frost it with that;) Did you know that you can buy egg roll wrappers? I didn't until this past weekend... Did you know you can fill them with anything you want, bake them in the oven at 375 and they come out golden, crispy and delicious? I didn't know that until this weekend either. Today we had some at the center that I filled with pizza toppings and dipped in sauce, but really the possibilities are endless. I can hardly wait to see what I fill them with next. Let me know what your favorites are :)
This is a quick and easy smoothie, almost no prep time!!
1 bag frozen peaches 1 1/2 yogurt ( I use vanilla) 1 cup squash puree orange juice - use as much as you like to make it thick or thin * serve with fancy straw or an umbrella * also would make great homemade fruit pops in the freezer :) Monday- Closed for Easter
Tuesday - Am Snack -spinach dip, cucumbers, pita and milk Lunch - Beef stew, bun, veggie cups with dip, milk and assorted fruit Pm Snack - pretzels, cheese, seasonal fruit Wednesday - Assorted fruit and cereal, milk Lunch - Alice's chicken, beet salad, mashed potatoes, milk and peach smoothie Pm Snack crackers, cheese and fruit Thursday - Am Snack - yogurt, fruit, graham crackers and milk Lunch - pizza egg rolls, assorted veggies and dip, hm zucchini sticks, milk and melon Pm Snack - rice cakes and cheese, raisins Friday - Am Snack - Apple cars, cheese and crackers Lunch - potato salad, veggies and dip, cheese, buns, cold meat, milk and hm fruit muffin Pm Snack - cucumbers, crackers * all am snacks and lunches are served with 2% milk and pm snack is served with 100$ juice or water Hoping you all had a great Easter with your friends and family, I know my family sure did:) I will be posting some more meal plans later tonight . Lunch - chicken fajita's, salad, milk, yogurt cups Pm Snack - homemade bits and bites Tuesday 15th - Am Snack - fruit salad, graham crackers, milk Lunch- homemade soup (vegetable and chicken), garlic bread with cheese, milk and assorted fruit tray Pm Snack- rice cakes and apples Wednesday 16th - Am Snack - Easter (deviled) eggs, cheese, cracker and milk Lunch-BBQ chicken subs, assorted veggies with dip, Easter kabobs and milk Pm Snack- cucumbers and crackers Thursday 17th - Am Snack- cereal, fruit and milk Lunch - chicken casserole, salad, watermelon cake and milk Pm Snack- assorted fruit, cheese, crackers Friday 18th Closed for Easter :) * all am snacks and lunches are served with milk and pm snack is served with the choice of water or 100% fruit juice So, I saw this on Pinterest and thought what a great activity to try (thinking for sure it wouldn't work) But much to my surprise....It DID! All you do is put the end of your Romaine lettuce that you would normally compost or throw away in water, place it in a nice sunny spot and wait for it to grow (make sure it always has lots of water). It may not look like much now, but when I am making a salad from lettuce I grew the children will be so excited! You can also do this with celery, bok choy and green onions. Guess what we are having with lunch today ;)
