Check out these little beauties I made on Friday, just a really fun way to present cheese and cracker :)
Did you know that you can buy egg roll wrappers? I didn't until this past weekend... Did you know you can fill them with anything you want, bake them in the oven at 375 and they come out golden, crispy and delicious? I didn't know that until this weekend either. Today we had some at the center that I filled with pizza toppings and dipped in sauce, but really the possibilities are endless. I can hardly wait to see what I fill them with next. Let me know what your favorites are :)
So, I saw this on Pinterest and thought what a great activity to try (thinking for sure it wouldn't work) But much to my surprise....It DID! All you do is put the end of your Romaine lettuce that you would normally compost or throw away in water, place it in a nice sunny spot and wait for it to grow (make sure it always has lots of water). It may not look like much now, but when I am making a salad from lettuce I grew the children will be so excited! You can also do this with celery, bok choy and green onions. Guess what we are having with lunch today ;)
Today we are welcoming Spring with an Everything's Coming Up Lemons cooking class. The preschool age children came to make a Super Lemon Loaf. They did all the hard work :) They got to squeeze all the lemons for both the loaf and the topping :) Super Lemon Loaf
3 eggs 1 cup of sugar 1/2 softened margarine 1 1/2 cups whole wheat flour 1 1/3 tsp baking powder 3 tbsp. lemon zest 3/4 cup fresh squeezed lemon juice * mix together all ingredients and pour into loaf pan * bake in a 350 oven for approximately 45 minutes (or until toothpick comes out clean) Topping juice from 1 lemon and 1/2 cup powdered sugar ( may need less or more depending on how much juice you get from the lemon, but your topping should be very loose) mix and drizzle over top of warm loaf - I also added a few poppy seeds and more zest for colour and flavour Enjoy!! For snack I made the bananas to go with their cereal into fun animal shapes. They enjoyed eating them as much as I enjoyed making them . Picky kids will usually eat if you make it "a-peeling" to them ;)
Did you know that this Thursday March 20th is Hungry caterpillar Day? (Eric Carle) Well I found out so I have planned an entire meal day for this special occasion. We Are having Hungry caterpillar grape skewers at snack. For lunch I am making all the foods that the Hungry Caterpillar ate during his journey in becoming a butterfly but serving them finger food style in ice cube trays.
