So I know I was supposed to have yogurt and granola for morning snack today, but I had a surplus of broccoli in the fridge that I did not want to go to waste. So in true Jessica fashion I set out to make some sort of broccoli something:) As I continued to look through the fridge I found cream cheese, mayo, parmesan, fresh garlic, cheddar cheese and onions. So I set out to make a yummy broccoli dip.
I cooked and mashed all the broccoli I could find, which was about 4 cups when it was all said and done, mixed in about a half a container of cream cheese and a few tablespoons of mayo. Minced an onion and some garlic, shredded the cheese, sprinkled the parm and mixed it all together in a bowl, spread it out in a greased 8x8 glass dish and baked it until all the cheese was all melty and good. Served it with crackers and cut up veggies. It was so yummy!
Moral or this is to never settle, make the best of what you can out of what ever you can find in the fridge :)
