- 4 diced plum tomatoes
- 1 small diced onion
- 2 minced garlic cloves
- 3/4 c raw fresh spinach chopped fine
- 3 tbsp of olive oil
- 1/3 c smal cubed feta cheese
mix it all together and let sit for 30 minutes
* serve with baguette, pita chips, whole grain corn chips ect.
