Today we had a lunch that I had never made, nor had I ever tried. But when someone asks me to make something I never back down from a challenge. So today I made Sausage Ratatouille! It wasn't the layered fancy ones you find on the web, it was more of a "home cooked, just got in the door and want to make my kids a healthy meal on a budget" kind of meal. So I cut up 2 onions. 2 zucchini, 3 carrots, a pack of mushrooms, 2 green peppers, 1 eggplant and a piled it into a baking dish and on top placed 7 sausages. Put it in the oven to bake for 1 hour at 350. Then took it out, cut up all the sausage and stirred it in, poured 2 cans of no salt added diced tomatoes and put it back in the oven for an hour(stirring it twice during the remaining time). While it was cooking I cooked some rice to serve with it. Voila! A healthy and easy meal. It is full of good vegetables for the daycare kids, I was not expecting them not to like it, but much to my surprise they LOVED it! Another healthy winner:)
