For snack I made the bananas to go with their cereal into fun animal shapes. They enjoyed eating them as much as I enjoyed making them . Picky kids will usually eat if you make it "a-peeling" to them ;)

(Eric Carle) Well I found out so I have planned an entire meal day for this special occasion. We Are having Hungry caterpillar grape skewers at snack. For lunch I am making all the foods that the Hungry Caterpillar ate during his journey in becoming a butterfly but serving them finger food style in ice cube trays. Lunch - meatballs in gravy over smashed potatoes and carrots with milk and Shamrock shakes for dessert( spinach, frozen vanilla yogurt and green food colouring mixed with milk Pm Snack- Pretzel shamrocks with fruit Tuesday 18th - Am Snack - assorted veggies, dip, crackers and milk Lunch - chicken stir fry with basmati rice, milk and fruit tray Pm Snack- Yogurt cups and graham crackers Wednesday 19th -Am Snack - cottage cheese, fruit, crackers and milk Lunch - spinach and chicken bake, garden salad and milk with assorted fruit\ Pm Snack - veggies with dip and crackers Thursday 20th- Am Snack- grape skewers, crackers and milk Lunch - Hungry caterpillar finger food lunch, milk and hungry caterpillar cupcakes Pm Snack - cheese, crackers and fruit Friday 21st - Am Snack- fruit cone and milk Lunch - beef sliders, salad, milk and apple sauce Pm Snack - melon and rice crackers This is an easy and so yummy recipe with very few ingredients. I like to serve it with pasta, chicken and garlic toast to make a well rounded dinner. I hope you enjoy this as much ans my family and the kids at our center.
*cook 7 cups of cauliflower florets in 4 cups of low sodium(or homemade) chicken stock with 2 cups of water until fork tender and let cool. Do Not Drain Liquid!!! * once cool all 2-4 tablespoons of roasted garlic (more depending on your taste preference), 1/2 cup milk or cream, 1 tsp pepper, 1 1/2 tsp parsley and mix together using a hand held blender * reheat on stove top and serve with your favourite pasta :) We are having a spirit week this week so things might seem a little crazy :)

- 1 cup spinach puree(I use fresh spinach) - 1 can no salt diced tomatoes - small whole wheat tortillas - shredded cheese - shredded lettuce - sour cream - salsa * brown ground beef with tomatoes and spinach puree * once cooked fill tortillas with mixture place side by side in a baking dish and top with cheese and bake at 350 till cheese is melted ( about 10 minutes) * remove from oven and top with shredded lettuce, salsa and sour cream serve immediately |
