This is an easy and so yummy recipe with very few ingredients. I like to serve it with pasta, chicken and garlic toast to make a well rounded dinner. I hope you enjoy this as much ans my family and the kids at our center.
*cook 7 cups of cauliflower florets in 4 cups of low sodium(or homemade) chicken stock with 2 cups of water until fork tender and let cool. Do Not Drain Liquid!!!
* once cool all 2-4 tablespoons of roasted garlic (more depending on your taste preference), 1/2 cup milk or cream, 1 tsp pepper,
1 1/2 tsp parsley and mix together using a hand held blender
* reheat on stove top and serve with your favourite pasta :)
