This morning I made a beet hummus, the colour was fabulous and so was the taste ;)
1 can chickpeas rinsed
2 cooked beets with 1/4 of liquid they were cooked in and cooled
1/2 cup sour cream (I used 5%)
3 tablespoons of roasted garlic
* add it all to food processor and blend until smooth
serve with warm pita, cucumbers or your favorite crackers :)
