I got a fresh bread form the grocery store and cut it in half length ways, hollowed it out and filled if with goodness;)
* in the oven on parchment paper I roasted, eggplant, zucchini, onions and mushrooms at 300
* while they were roasting I made a homemade aioli with mayo, garlic and basil
* to assemble sandwich spread aioli on the inside of both top and bottom of the hollowed out loaf the layer roasted veggies, fresh baby spinach and meat of choice ( I used salami and prosciutto ) then you need to press it. You need a LOT of weight to press it together I as you see wrapped the sammies in foil, covered them with another cookie sheet and put a sewing machine on top...You may need to get inventive, but it is sooooo worth it. Press for at least 2 hours slice and serve!

Lunch is ready. Served with a homemade Greek pasta salad and an assortment of fresh fruit for dessert.
