So you use the eggplant as the crust!
Slice the eggplant into rounds about 1/3 inch thick
sprinkle with salt and let sit for 25/30 minutes ( to release the excess water) pat dry
brush them with olive oil and oregano (can also use Italian seasoning) bake them in a preheated 400 oven for about 15 minutes until they are starting to get tender
remove from oven and top with favorite pizza topping and return to oven under broiler until cheese is melted
* can also be done with zucchini
