Today we are welcoming Spring with an Everything's Coming Up Lemons cooking class. The preschool age children came to make a Super Lemon Loaf. They did all the hard work :) They got to squeeze all the lemons for both the loaf and the topping :)
Super Lemon Loaf
3 eggs
1 cup of sugar
1/2 softened margarine
1 1/2 cups whole wheat flour
1 1/3 tsp baking powder
3 tbsp. lemon zest
3/4 cup fresh squeezed lemon juice
* mix together all ingredients and pour into loaf pan
* bake in a 350 oven for approximately 45 minutes (or until toothpick comes out clean)
Topping
juice from 1 lemon and 1/2 cup powdered sugar ( may need less or more depending on how much juice you get from the lemon, but your topping should be very loose) mix and drizzle over top of warm loaf
- I also added a few poppy seeds and more zest for colour and flavour
